With his roots in French cuisine, Chef Michael Smith creates fresh, simple, unfussy American fare with a nod to his French foundation. He began his career at Chateau Pyrenees, a French restaurant in Denver, where he studied under Jean-Pierre Lelievre and, later Georges Mavrothalassiti. In 1985, he discovered the traditional European approach of artisinal products made from the freshest local ingredients during his travels to Nice and Cassis. He is currently the owner of Forty Sardines, Tapas restaurant, Extra Virgin, and is a consultant in the highly successful fast casual concept, SPIN Pizza in Leawood, Kansas.
In 1999, he won the James Beard Foundation award for Best Chef in the Midwest. In 2002, his restaurant Forty Sardines was nominated the James Beard Foundation award for “Best New Restaurant” and won the James Beard Foundation award for “Best Restaurant Graphics”.
